A nutritious and flavorful grilled chicken dish served with brown rice and vegetables, perfect for a healthy meal.

Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts (450-500g total)
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 3 cloves garlic, minced
  • 1 tsp paprika
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp chopped parsley

Carbohydrates

  • 1 cup cooked brown rice

Vegetables

  • 2 cups mixed vegetables
  • 1 tsp olive oil for vegetables

Optional

  • lemon wedges (for garnish)
  • Greek yogurt-herb sauce (for serving)

Instructions 

  • Whisk olive oil, lemon juice, garlic, paprika, salt, and pepper.
  • Coat chicken thoroughly and marinate for 30 minutes to 12 hours in refrigerator.
  • Heat grill to medium-high and grill chicken 6-7 minutes per side until internal temperature reaches 165°F (74°C). Rest 5 minutes and slice against the grain.
  • Steam brown rice and roast vegetables at 400°F (200°C) for 15 minutes.
  • Plate rice, sliced chicken, and vegetables. Garnish with parsley and lemon wedges. Serve with Greek yogurt-herb sauce if desired.

Notes

Adjust marination time for more flavor. Use fresh herbs for best taste.
