Enjoy these wholesome oatmeal cookies packed with apples and warm spices, perfect for a healthy snack or dessert.

Ingredients

spices

  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 0.5 teaspoon baking soda

dry ingredients

  • 124 g all-purpose flour
  • 113 g softened unsalted butter
  • 150 g brown sugar
  • 1 large egg
  • 1 teaspoon vanilla essence

wet ingredients

  • 142 g quick oats
  • 126 g apples, finely diced

Instructions 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Mix dry ingredients: flour, cinnamon, nutmeg, salt, baking soda.
  • Cream butter and brown sugar until smooth. Add egg and vanilla, mix well.
  • Stir in oats and diced apples. Combine with dry ingredients.
  • Drop spoonfuls onto prepared baking sheet. Bake for 12 minutes until golden.

Notes

For softer cookies, bake a little longer or add a splash of milk to the dough.
