Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
Mix dry ingredients: flour, cinnamon, nutmeg, salt, baking soda.
Cream butter and brown sugar until smooth. Add egg and vanilla, mix well.
Stir in oats and diced apples. Combine with dry ingredients.
Drop spoonfuls onto prepared baking sheet. Bake for 12 minutes until golden.
Notes
For softer cookies, bake a little longer or add a splash of milk to the dough.
