Enjoy a wholesome, easy-to-make breakfast cookie packed with oats, bananas, and chocolate chips for a nutritious start to your day.

Ingredients

Dry ingredients

  • 2 cup quick oats
  • ½ tsp ground cinnamon
  • ¼ tsp salt

Wet ingredients

  • ½ cup creamy peanut butter
  • ½ tsp vanilla extract
  • 2 large ripe bananas mashed (about 1 ½ cups)
  • ¼ cup chocolate chips

Instructions 

  • Preheat oven to 350°F (177°C). Line a baking sheet with parchment paper or a silicone mat.
  • Combine all ingredients in a large bowl and stir until well mixed.
  • Drop 2 tablespoon scoops onto the baking sheet and flatten slightly to form cookies.
  • Bake for 14-17 minutes until edges brown. Cool before serving.

Notes

For softer cookies, slightly underbake and let cool on the baking sheet.
