Ingredients

Wet ingredients

  • 1 cup mashed ripe bananas (about 3 medium ripe bananas)
  • ¾ cup natural creamy or crunchy peanut butter (just peanuts and salt)
  • 2 large eggs
  • ¼ cup pure maple syrup
  • 2 teaspoons vanilla extract
  • ½ tablespoon dairy free milk of choice (e.g., almond milk)

Dry ingredients

  • 1 cup gluten free oat flour (can make your own)
  • 1 teaspoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon salt
  • cup mini chocolate chips (dairy free, plus 2-3 tablespoons for topping)

Instructions 

  • Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with liners and spray with nonstick spray.
  • Mix mashed bananas, peanut butter, eggs, maple syrup, vanilla, and milk until smooth.
  • Stir in oat flour, baking powder, cinnamon, and salt. Fold in chocolate chips.
  • Divide batter evenly into muffin liners and bake for 20-25 minutes until a toothpick comes out clean. Cool on wire rack.

Notes

For extra flavor, sprinkle additional chocolate chips on top before baking.
