Enjoy a nutritious and flavorful meal with these baked taco stuffed peppers, packed with lean protein and fresh ingredients.

Ingredients

Peppers

  • 6 large bell peppers (any color)
  • 1 lb lean ground turkey
  • 1 medium onion (finely diced)
  • 3 cloves garlic (minced)
  • 1 can (14.5 oz) diced tomatoes (drained)
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 cup corn kernels
  • 2-3 tbsp taco seasoning (1 packet)
  • 1 cup cooked brown rice (or cauliflower rice)
  • 1 cup shredded Mexican blend cheese
  • ¼ cup chopped fresh cilantro
  • 1 lime lime wedges

Optional toppings

  • to taste avocado, Greek yogurt/sour cream, salsa (as desired)

Instructions 

  • Preheat oven to 375°F. Prepare peppers by cutting tops and removing seeds.
  • Cook turkey and onion until browned. Add garlic, taco seasoning, tomatoes, beans, and corn; simmer 5 minutes.
  • Mix in cooked rice, half the cheese, and most of the cilantro.
  • Stuff peppers with mixture, top with remaining cheese, add water, cover, and bake 25 minutes. Uncover and bake 10 more minutes.
  • Garnish with cilantro, lime wedges, and optional toppings before serving.

Notes

Using cauliflower rice reduces carbs and calories for a healthier option.
