diced tomatoes
(drained)
1 can (15 oz)
black beans
(rinsed and drained)

corn kernels

taco seasoning

cooked brown rice
(or cauliflower rice)

shredded Mexican blend cheese

chopped fresh cilantro

Instructions
Preheat oven to 375°F. Prepare peppers by cutting tops and removing seeds.
Cook turkey and onion until browned. Add garlic, taco seasoning, tomatoes, beans, and corn; simmer 5 minutes.
Mix in cooked rice, half the cheese, and most of the cilantro.
Stuff peppers with mixture, top with remaining cheese, add water, cover, and bake 25 minutes. Uncover and bake 10 more minutes.
Garnish with cilantro, lime wedges, and optional toppings before serving.
Notes
Using cauliflower rice reduces carbs and calories for a healthier option.
