Ingredients

Main Ingredients

  • 1 tablespoon olive oil
  • 8 ounces ground turkey
  • 1 clove garlic (minced)
  • 2-3 cups fresh spinach
  • 1/4 teaspoon salt
  • To Taste pepper
  • 1/4 teaspoon dried oregano
  • 2 large tortillas
  • 2 cups mozzarella cheese (shredded)

Instructions 

  • Heat olive oil in a skillet, cook ground turkey until browned, then add garlic and spinach; cook briefly.
  • Spread cheese on half of each tortilla, add turkey mixture, then top with more cheese. Fold in half.
  • Cook each quesadilla in a skillet with oil for 1-2 minutes per side until golden and cheese melts.
  • Cut into 4 pieces and serve hot.

Notes

Use fresh spinach for best flavor and nutrition.
