Instructions
Heat olive oil in a skillet, cook ground turkey until browned, then add garlic and spinach; cook briefly.
Spread cheese on half of each tortilla, add turkey mixture, then top with more cheese. Fold in half.
Cook each quesadilla in a skillet with oil for 1-2 minutes per side until golden and cheese melts.
Cut into 4 pieces and serve hot.
