Celebrate the holidays with this beautiful focaccia wreath topped with olives and fragrant rosemary, perfect for sharing.

Ingredients

Dough

  • 3 cups Bread flour
  • 1 packet Active dry yeast
  • 0.5 cup Extra virgin olive oil
  • 1 cup Warm water (about 110°F / 43°C)

Toppings

  • 0.5 cup Kalamata olives (pitted and sliced)
  • 2 tablespoons Fresh rosemary (chopped)
  • 1 teaspoon Coarse sea salt

Instructions 

  • Mix warm water, yeast, and a pinch of sugar; let sit until frothy, about 5 minutes.
  • Combine flour, salt, olive oil, and the yeast mixture; knead until smooth and elastic, about 10 minutes.
  • Place dough in a greased bowl, cover, and let rise until doubled, about 30 minutes.
  • Preheat oven to 400°F (200°C). Punch down the dough and shape into a wreath on a baking sheet.
  • Press olives and rosemary into the dough, sprinkle with sea salt, and let rest for 10 minutes.
  • Bake for 20-25 minutes until golden brown. Serve warm or at room temperature.

Notes

For extra flavor, brush the wreath with olive oil before baking.
