Instructions
Wrap sweet potatoes in foil and bake at 400ºF for 65 minutes, or boil for 40-50 minutes. Cool and peel.
Mix flour, sugar, and salt for the crust. Add oil and milk; press into a 9-inch pie dish.
Mash sweet potatoes and combine with butter, sugar, milk, eggs, flour, vanilla, lemon extract, and spices. Beat until smooth.
Pour filling into crust and bake at 350ºF for 55-60 minutes until set. Cool for 1 hour before serving.
Notes
For a crisper crust, pre-bake it for 10 minutes before adding the filling.
