Ingredients

Protein

  • 2 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 2 tablespoons honey
  • 1 tablespoon chipotle peppers in adobo sauce, finely chopped
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon garlic powder
  • 0.5 teaspoon cumin
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon lime juice
  • 1 cup cooked white or brown rice (or cauliflower rice for low-carb option)
  • 0.5 cup black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 0.5 cup corn (fresh, canned, or frozen)
  • 0.25 small red onion, finely diced
  • 1 small avocado, sliced
  • 0.25 cup chopped fresh cilantro

Lime Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 0.5 teaspoon honey
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Instructions 

  • Mix honey, chipotle peppers, smoked paprika, garlic powder, cumin, salt, black pepper, and lime juice in a small bowl.
  • Heat olive oil in a skillet, season chicken with salt and pepper, and cook for 6–8 minutes per side until cooked through.
  • Drizzle sauce over chicken, let rest, then slice.
  • Assemble bowls with rice, beans, corn, tomatoes, onion, avocado, and cilantro. Optional: whisk lime dressing ingredients and drizzle over bowls.

Notes

For a low-carb option, substitute rice with cauliflower rice.
