Ingredients

Protein

  • 400 g chicken breasts (about 2 large)
  • 2 tablespoons honey
  • 3 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Base

  • 3 cups cooked white or brown rice
  • 2 ripe avocados, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels
  • 0.25 cup red onion, sliced
  • 3 tablespoons fresh cilantro, chopped
  • 0.5 cup Greek yogurt or sour cream (optional)
  • 0.5 teaspoon chili flakes (optional)

Instructions 

  • Whisk honey, lime juice, lime zest, garlic, soy sauce, olive oil, salt, and pepper.
  • Marinate chicken for 10–15 minutes.
  • Cook chicken in a skillet for 5–7 minutes per side until golden and cooked through, then rest and slice.
  • Assemble bowls with rice, top with chicken, avocado, tomatoes, corn, red onion, cilantro, and optional yogurt and chili flakes.
