A flavorful and easy-to-make dish combining tender honey-lime chicken with creamy avocado rice, perfect for a quick weeknight dinner.

Ingredients

Protein

  • 2 pieces skinless, boneless chicken breasts
  • 1/4 cup honey
  • 2 tablespoons lime juice

Produce

  • 2 ripe avocados
  • 1 cup cooked rice
  • 1 tablespoon olive oil

Instructions 

  • Marinate chicken: Mix honey, lime juice, salt, and pepper. Coat chicken and marinate for 30 minutes.
  • Cook chicken: Heat oil in skillet, cook marinated chicken 5-7 minutes per side until golden and cooked through.
  • Prepare avocado rice: Mash avocados, mix with cooked rice, salt, and lime juice.
  • Finish chicken: Pour remaining marinade into pan, cook 5-7 minutes until sauce thickens.
  • Serve: Slice chicken, serve over avocado rice, garnish with cilantro if desired.

Notes

For extra flavor, add a squeeze of lime or chopped cilantro on top before serving.
