Ingredients

Main Ingredients

  • 2 tbsp hot honey
  • 250 g lean beef mince (I use 5% fat)
  • 2 tbsp taco seasoning (half a pack)
  • 200 g cottage cheese
  • 500 g sweet potato
  • 200 g tenderstem broccoli
  • 1 medium avocado
  • 1 tsp salt
  • 1 tsp smoked paprika
  • Olive oil spray

Instructions 

  • Peel the sweet potatoes and chop into bite-sized chunks.
  • Toss the sweet potato chunks with olive oil, salt, and smoked paprika. Roast at 200°C (400°F) for 25 minutes.
  • Cook the beef mince in a skillet until browned, then stir in taco seasoning and hot honey.
  • Prepare the tenderstem broccoli by steaming or sautéing until tender.
  • Assemble bowls with roasted sweet potatoes, seasoned beef, cottage cheese, sliced avocado, and broccoli.

Notes

For extra flavor, drizzle with additional hot honey before serving.
