Ingredients

Dry ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp cinnamon

Wet ingredients

  • ½ cup Irish butter
  • ¾ cup sugar
  • 2 large eggs
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ¼ cup buttermilk (optional for added moisture)

Fruits

  • 2 cups chopped Bramley apples

Instructions 

  • Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  • Cream butter and sugar until light. Beat in eggs one at a time.
  • Sift flour, baking powder, and cinnamon. Fold into wet ingredients, adding buttermilk if desired.
  • Stir in chopped apples. Pour batter into the pan and bake for 40-45 minutes.
  • Serve warm with custard or cream.

Notes

For extra moisture, add a splash of buttermilk to the batter.
