A delightful coffee cake featuring tangy lemon and creamy Greek yogurt, perfect for breakfast or dessert.

Ingredients

Dough

  • 1 1/2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 egg egg
  • 8 oz greek yogurt cream cheese, softened (or plain cream cheese)
  • 1 1/2 tsp freshly squeezed lemon juice
  • 1/2 cup vegetable oil

Filling

  • 3/4 cup sugar
  • 1 egg egg
  • 1/2 cup greek yogurt
  • Zest from 1 lemon lemon zest
  • 1 tbsp lemon juice (use extra for more lemon flavor)

Topping

  • 1/2 cup flour
  • 1/4 cup sugar
  • 2 tbsp unsalted butter, cold and cubed

Dusting

  • Powdered sugar for dusting

Instructions 

  • Preheat oven to 350°F (175°C). Mix dry ingredients for the batter and combine with wet ingredients until smooth.
  • Prepare the lemon filling by mixing Greek yogurt, sugar, egg, lemon zest, and lemon juice.
  • Pour batter into a greased baking pan, spread lemon filling over it, and sprinkle topping mixture on top.
  • Bake for 35 minutes or until golden brown. Let cool and dust with powdered sugar before serving.

Notes

Ensure not to overmix the batter for a tender crumb.
