Ingredients

Protein

  • 1 lb boneless, skinless chicken thighs
  • 0.5 cup sweet chili sauce
  • 2 tablespoons soy sauce or tamari for gluten-free
  • 2 cloves garlic minced
  • 1 tablespoon ginger grated

Grains

  • 2 cups jasmine or basmati rice

Vegetables

  • 2 cups bell peppers sliced
  • 1 cup broccoli florets

Garnishes

  • 2 tablespoons green onions sliced
  • 1 tablespoon sesame seeds optional

Instructions 

  • Cook rice according to package instructions.
  • Cook chicken thighs in a skillet until browned and cooked through, then set aside.
  • In the same skillet, sauté garlic and ginger, then add sweet chili sauce and soy sauce, simmer briefly.
  • Add sliced bell peppers and broccoli to the skillet, cook until tender.
  • Return chicken to the skillet, toss to coat, then serve over rice, garnished with green onions and sesame seeds.

Notes

For extra flavor, marinate chicken in some of the sauce before cooking.
