Ingredients

For the Zucchini Fries

  • 2 medium zucchini (about 1 pound or 450g total)
  • 1 teaspoon fine sea salt (for drawing out moisture)
  • 1 large egg
  • 1 tablespoon heavy cream or unsweetened almond milk
  • 0.75 cup finely ground blanched almond flour
  • 0.5 cup finely grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon dried oregano or Italian seasoning
  • 0.25 teaspoon black pepper
  • to taste Avocado oil spray or olive oil spray

For the Optional Spicy Aioli Dip

  • 0.5 cup mayonnaise (avocado oil-based)
  • 1 tablespoon sriracha or other sugar-free hot sauce
  • 1 teaspoon lime juice
  • 1 clove garlic, minced
  • Pinch salt

Instructions 

  • Rinse and dry the zucchini, then cut into ½-inch thick spears.
  • Sprinkle with salt and let sit for 20-30 minutes to draw out moisture, then pat dry.
  • Prepare egg wash with egg and cream; mix dry ingredients in a separate bowl.
  • Dip zucchini in egg wash, then coat with almond-Parmesan mixture. Arrange in air fryer basket.
  • Spray with oil, air fry at 400°F (200°C) for 10-14 minutes, flipping halfway, until golden and crispy.

Notes

Ensure fries are dry before breading for maximum crispiness.
