Delicious and healthy keto-friendly granola bars packed with nuts, seeds, and dried berries, perfect for on-the-go snacking.

Ingredients

dry ingredients

  • 1 cup almonds
  • 1 2 cup sunflower seeds
  • 1 2 cup pumpkin seeds
  • 1 4 cup chia seeds
  • 1 4 cup flaxseeds
  • 1 2 cup unsweetened shredded coconut
  • 1 2 cup unsweetened mixed berries, freeze-dried

wet ingredients

  • 1 4 cup butter
  • 1 4 cup almond butter
  • 2 tbsp erythritol
  • 1 tsp vanilla extract
  • 1 2 tsp cinnamon
  • 1 4 tsp salt

Instructions 

  • Preheat oven to 350°F (175°C) and line an 8x8-inch pan with parchment paper.
  • Mix dry ingredients in a large bowl.
  • Combine melted butter, almond butter, erythritol, vanilla, cinnamon, and salt; mix well.
  • Pour wet mixture into dry ingredients and mix thoroughly.
  • Fold in freeze-dried berries, press mixture into pan, and bake for 20 minutes.
  • Cool completely before cutting into 12 bars.

Store in an airtight container for up to a week.
