A quick and delicious way to transform leftover turkey into a creamy pasta dish perfect for any day.

Ingredients

Pasta

  • 2 cups penne pasta
  • 1 cup leftover turkey, cubed
  • 1/2 cup frozen peas
  • 2 tbsp butter
  • 3 cloves garlic (peeled and finely chopped)
  • 1 cup heavy cream (double cream)
  • 1/4 cup parmesan, grated
  • 1/4 tsp ground black pepper
  • 1 tsp salt
  • 1 tbsp parsley (chopped, for garnish)

Instructions 

  • Cook the pasta according to package instructions, then drain, reserving 2 tbsp of water.
  • Boil frozen peas in water for 5 minutes, then drain and set aside.
  • In a large pan, melt butter, add garlic, and cook for 30 seconds. Add cream, bring to a boil, then remove from heat.
  • Stir in reserved water, parmesan, turkey, peas, salt, and pepper. Mix well.
  • Combine with cooked pasta, garnish with parsley, and serve.

Notes

You can add extra herbs or cheese for more flavor.
