Ingredients

Crust

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter (softened)
  • 1/4 cup powdered sugar

Filling

  • 1 cup granulated white sugar
  • 2 large eggs
  • 2 tablespoons all-purpose flour
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt

Instructions 

  • Preheat oven to 350°F (175°C). Mix flour, butter, and powdered sugar; press into an 8×8 inch pan lined with parchment.
  • Bake crust for 18-20 minutes. Prepare lemon filling by whisking sugar, flour, eggs, lemon juice, zest, and salt.
  • Pour lemon mixture over hot crust and bake for another 20 minutes until edges are set.
  • Cool to room temperature, then refrigerate for at least 2 hours before serving.
