A moist and flavorful bread bursting with fresh blueberries and zesty lemon, perfect for breakfast or a snack.

Ingredients

Dry ingredients

  • 2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tbsp lemon zest

Wet ingredients

  • 2 large eggs
  • 3/4 cup milk or yogurt
  • 1/3 cup vegetable oil or melted butter
  • 2 tbsp fresh lemon juice
  • 1 cup blueberries (fresh or frozen)

Instructions 

  • Preheat oven to 350°F (175°C) and grease a loaf pan.
  • Mix dry ingredients and lemon zest in a bowl.
  • Whisk eggs, milk, oil, and lemon juice until smooth.
  • Combine wet and dry ingredients; fold in blueberries.
  • Pour batter into pan and bake for 55-65 minutes; cool before serving.

Notes

Use fresh blueberries for best flavor, but frozen work well too.
