Delightful coconut macaroons infused with fresh lemon and optional white chocolate drizzle, perfect for a tangy-sweet treat.

Ingredients

Dried Coconut

  • 2 cups shredded unsweetened coconut

Sweetened Condensed Milk

  • 0.5 cup sweetened condensed milk

Lemon Juice

  • 0.25 cup fresh lemon juice

Lemon Zest

  • 1 unit zest of 1 lemon

Vanilla Extract

  • 1 teaspoon vanilla extract

Salt

  • 0.25 teaspoon salt

White Chocolate Chips

  • 0.5 cup white chocolate chips (optional for drizzling) (for optional drizzle)

Instructions 

  • Preheat oven to 325°F (165°C) and line a baking sheet with parchment.
  • Mix coconut, condensed milk, lemon juice, lemon zest, vanilla, and salt until well combined.
  • Form mixture into small mounds on the baking sheet, spacing about 1 inch apart.
  • Bake for 20-25 minutes until golden and firm. Cool on a wire rack.
  • If desired, melt white chocolate and drizzle over cooled macaroons.

Notes

For a richer flavor, chill the mixture before forming into mounds.
