Instructions
Preheat oven to 325°F (165°C) and line a baking sheet with parchment.
Mix coconut, condensed milk, lemon juice, lemon zest, vanilla, and salt until well combined.
Form mixture into small mounds on the baking sheet, spacing about 1 inch apart.
Bake for 20-25 minutes until golden and firm. Cool on a wire rack.
If desired, melt white chocolate and drizzle over cooled macaroons.
Notes
For a richer flavor, chill the mixture before forming into mounds.
