Ingredients

Protein

  • 1 lb boneless, skinless chicken breasts, cubed
  • 1 cup long-grain white rice

Vegetables

  • 2 cups broccoli florets
  • 1 red red bell pepper, sliced
  • 1 yellow yellow bell pepper, sliced
  • 1 small red onion, sliced
  • 3 cloves garlic, minced

Sauce & Seasonings

  • 1 cup heavy cream
  • 1/4 cup fresh lemon juice
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp paprika

To taste

  • Salt and black pepper (to taste)

Garnish

  • to taste Fresh parsley, chopped (for garnish)

Instructions 

  • Cook rice according to package instructions.
  • Sauté chicken with garlic, paprika, thyme, salt, and pepper until cooked through.
  • Roast or sauté vegetables until tender.
  • Combine heavy cream and lemon juice, then add to the chicken to create a creamy sauce.
  • Assemble bowls with rice, chicken, vegetables, and sauce. Garnish with parsley.

Notes

For extra flavor, marinate the chicken with lemon juice and herbs beforehand.
