Salmon fillets

(about 1 to 1½ lb total, at least 1 inch thick)
Marinade

Fresh lemon juice

Instructions
Pat salmon dry and place in a shallow dish.
Whisk lemon juice, olive oil, garlic, lemon zest, herbs, mustard or honey, salt, and pepper. Pour over salmon and marinate for 30 minutes.
Preheat grill to medium-high. Oil the grates.
Grill salmon skin-side down for 3–8 minutes per side until cooked through. Rest for 2–3 minutes.
Garnish with herbs and lemon slices before serving.
Notes
Ensure not to overcook the salmon for best flavor and texture.
