A flavorful and easy-to-make dish featuring tender tilapia cooked with lemon and paprika, served with seasoned rice and vegetables.

Ingredients

  • 3 Tablespoons butter
  • 1 Tablespoon grated lemon zest
  • 1/2 Teaspoon black pepper
  • 1/2 Teaspoon paprika
  • 1/4 Teaspoon salt
  • 1 pound whole fresh or frozen Tilapia (if frozen, thaw before proceeding)
  • 2 Tablespoons butter
  • 1/2 cup onion, diced
  • 1/4 cup carrot, diced
  • 1/4 cup celery, diced
  • 1/2 Teaspoon salt
  • 2 10 ounce packages frozen microwaveable white rice

Instructions 

  • Cook the tilapia: Melt 3 tbsp butter in a skillet over medium heat. Add lemon zest, pepper, paprika, and salt. Add fish and cook 10-15 minutes until flaky and browned. Remove fish.
  • Make the rice: Melt 2 tbsp butter in the same skillet. Add onion, carrot, celery, and salt. Cook 10 minutes until vegetables are tender.
  • Cook rice according to package. Mix cooked rice with sautéed vegetables. Serve with tilapia.

Notes

Ensure tilapia is fully cooked and flakes easily before serving.
