A quick and flavorful pasta dish combining lemon, pesto, and turkey for a satisfying meal.
Ingredients
Salt

eggs

lemon zest
(from one lemon)

prepared basil pesto
0.5
pound
farfalle (bow tie) pasta

tablespoon
extra virgin olive oil

chopped onion
(about one medium onion)

garlic
(minced)

chopped cooked turkey meat
(leftover turkey thigh works great)
to taste
freshly ground black pepper
Instructions
Boil water with salt, cook pasta for 10 minutes.
Whisk eggs, lemon zest, and pesto; set aside.
Drain pasta, reserving 1/2 cup cooking water.
Sauté onions in olive oil until translucent, add garlic and turkey, cook through.
Add pasta to pan, pour egg mixture, stir quickly, add reserved water if needed.
Season with salt and pepper, serve immediately.
Notes
Use leftover turkey for best flavor and convenience.
