A moist and zesty lemon loaf with crunchy poppy seeds, perfect for a bright breakfast or afternoon treat.

Ingredients

Dry ingredients

  • 2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 2 tbsp poppy seeds

Wet ingredients

  • 1 cup granulated sugar
  • 2 large eggs (room temperature)
  • 1/2 cup whole milk (room temperature)
  • 1/2 cup unsalted butter (melted and cooled)
  • 1/4 cup fresh lemon juice (from 2 lemons)
  • 2 tbsp lemon zest (from 2 lemons)
  • 1 tsp vanilla extract

Glaze

  • 1 cup powdered sugar
  • 2-3 tbsp fresh lemon juice (for glaze)

Instructions 

  • Preheat oven to 350°F (175°C). Grease a loaf pan and line with parchment.
  • Mix dry ingredients and poppy seeds in a bowl.
  • Whisk sugar and eggs until thick, then add milk, butter, lemon juice, zest, and vanilla; mix well.
  • Fold dry ingredients into wet until just combined. Pour into pan.
  • Bake for 45-55 minutes until golden and a toothpick comes out clean. Cool in pan 10 minutes, then transfer to wire rack.
  • Mix powdered sugar with lemon juice to make glaze. Drizzle over cooled loaf and let set.

Notes

Ensure not to overmix the batter for a tender crumb.
