A fresh and flavorful pasta salad combining tender salmon, cherry tomatoes, and a zesty lemon pesto dressing, perfect for a light lunch or dinner.

Ingredients

Pasta

  • 12 oz penne (preferably Barilla for al dente texture)

Vegetables

  • 1 red onion red onion
  • 1 pint cherry tomatoes (halved for easier eating)

Seasonings

  • salt salt
  • black pepper black pepper

Protein

  • 8 oz salmon (patted dry for better sear)

Dressing & Flavor

  • 1 lemon lemon juice
  • 1/2 cup pesto (preferably Filippo Berio Classic Pesto)

Fresh herbs & cheese

  • fresh basil fresh basil
  • 1/3 cup parmesan (freshly grated)

Instructions 

  • Cook the penne in salted boiling water until al dente, then drain and set aside.
  • Season the salmon with salt and black pepper, then sear in olive oil until cooked through, about 4-5 minutes per side. Flake into large pieces.
  • In a large bowl, combine cooked pasta, cherry tomatoes, red onion, and salmon.
  • Whisk together lemon juice and pesto, then pour over the pasta mixture. Toss gently to combine.
  • Garnish with fresh basil and grated parmesan before serving.

Notes

For extra flavor, let the salad chill in the fridge for 30 minutes before serving.
