A fresh and flavorful pasta salad combining tender salmon, cherry tomatoes, and a zesty lemon pesto dressing, perfect for a light lunch or dinner.

Instructions
Cook the penne in salted boiling water until al dente, then drain and set aside.
Season the salmon with salt and black pepper, then sear in olive oil until cooked through, about 4-5 minutes per side. Flake into large pieces.
In a large bowl, combine cooked pasta, cherry tomatoes, red onion, and salmon.
Whisk together lemon juice and pesto, then pour over the pasta mixture. Toss gently to combine.
Garnish with fresh basil and grated parmesan before serving.
Notes
For extra flavor, let the salad chill in the fridge for 30 minutes before serving.
