A flavorful baked casserole combining tender salmon, orzo, fresh vegetables, and bright lemon flavors for a wholesome and satisfying meal.

Ingredients

Vegetables and aromatics

  • 2 small lemons lemons (zest one lemon)
  • 1 pint cherry tomatoes
  • 2 medium leeks (light green and white parts only, thinly sliced)
  • 3 cloves garlic (minced)
  • 6 tablespoons extra-virgin olive oil (divided)
  • 2 tablespoons capers (rinsed, divided)
  • 4 cups vegetable broth (lower-sodium)
  • 2 cups whole-wheat orzo (may also use regular orzo)
  • 2 teaspoons salt (divided)
  • 1.5 pounds skinless salmon fillet (cut into large chunks)
  • 1 pound fresh asparagus (trimmed and cut into 1-inch pieces)
  • ½ teaspoon ground pepper
  • 2 tablespoons chopped fresh dill (plus 1/4 cup divided)

Instructions 

  • Preheat oven to 425°F. Zest 1 lemon, slice the second lemon, and juice the zested lemon; set aside.
  • Combine lemon slices, tomatoes, leeks, garlic, 2 tbsp oil, and 1 tbsp capers in a baking dish; bake 15-18 mins.
  • Stir in broth, lemon zest, 1 tbsp lemon juice, orzo, and 1 tsp salt; cover and bake 20-26 mins.
  • Season salmon and asparagus with remaining salt, pepper, and 2 tbsp oil; add dill.
  • Stir in asparagus and dill into orzo, nestle salmon on top, and bake 10 mins until cooked through.

Notes

Use fresh dill for best flavor and ensure salmon is cooked until flaky.
