A delicious and nutritious make-ahead breakfast combining the tropical flavors of mango and coconut with creamy oats.

rolled oats

coconut milk

Greek yogurt
((or dairy-free yogurt))

chia seeds

honey or maple syrup

vanilla extract

fresh mango (diced)

shredded coconut
Instructions
Mix oats, coconut milk, yogurt, chia seeds, honey, vanilla, and salt in a jar or bowl.
Fold in half of the diced mango.
Refrigerate for at least 4 hours or overnight.
Stir and top with remaining mango and shredded coconut before serving.
Notes
Use ripe mango for the best flavor.
