A creamy and refreshing mango pudding perfect for a quick dessert. Made with ripe mangoes and gelatin or agar agar, it's easy to prepare and delightfully smooth.

12ozmangoes (fully ripened and tender, avoid sour mangoes)
0.54cupscoconut milk (full fat; or substitute with evaporated milk, heavy cream, or evaporated coconut milk)
2tbspcold water
1.5tbspwhite granulated sugar
1.5tbspgelatin (or 1.5 tsp agar agar powder for vegan)
4tbspevaporated milk (or coconut milk for vegan)
Instructions
Peel, pit, and blend mangoes into a smooth puree. Strain if desired.
Mix cold water and gelatin; let sit for 30-45 seconds.
Add sugar, coconut milk, and mango puree; whisk until smooth.
Heat mixture gently until gelatin dissolves, about 4-5 minutes. Pour into molds or bowls.
Refrigerate for at least 6 hours until set. Serve with extra coconut or evaporated milk.
