A smooth and refreshing mango pudding with a delicate texture, perfect for a quick and elegant dessert.

mango flesh for puree
(plus 1 extra mango for garnish)

Instructions
Sprinkle gelatin onto cold water and let sit for 10 minutes.
Blend mango and honey until smooth, then transfer to a pot. Add cream and heat until steaming, then turn off heat.
Dissolve gelatin in hot water, then mix into mango mixture. Adjust sweetness with lemon juice if needed.
Stir in mango cubes, pour into molds, and refrigerate for at least 3 hours until set.
Serve with extra cream, mango cubes, and mint leaves for garnish.
Notes
For best unmolding, refrigerate for at least 8 hours.
