Mango Pudding (Hong Kong Style)

A smooth and refreshing mango pudding with a delicate texture, perfect for a quick and elegant dessert.

Ingredients

Main ingredients

  • 300 g mango flesh for puree (plus 1 extra mango for garnish)
  • 0.25 cup cold water
  • 0.33 cup hot off-the-boil water
  • 2-4 Tbsp honey (depending on mango sweetness)
  • 2 tsp gelatin powder (for a firmer pudding, use 1/2 tsp more)
  • as needed Lime or lemon juice (depending on the mango)
  • 0.33 cup whipping cream or coconut milk (plus extra for serving)

Optional garnish

  • none mint leaves

Instructions 

  • Sprinkle gelatin onto cold water and let sit for 10 minutes.
  • Blend mango and honey until smooth, then transfer to a pot. Add cream and heat until steaming, then turn off heat.
  • Dissolve gelatin in hot water, then mix into mango mixture. Adjust sweetness with lemon juice if needed.
  • Stir in mango cubes, pour into molds, and refrigerate for at least 3 hours until set.
  • Serve with extra cream, mango cubes, and mint leaves for garnish.

Notes

For best unmolding, refrigerate for at least 8 hours.
