A crunchy, sweet, and nutty homemade granola perfect for breakfast or snacking, customizable with dried fruits or chocolate chips.

Ingredients

Dry Ingredients

  • 3 cups Old Fashioned Rolled Oats (no instant or quick, gluten free if needed)
  • 2 cups Pecans (rough-chopped)
  • 3/4 cup Unsweetened Shredded Coconut
  • 1/3 cup Sunflower Seeds (hulled)
  • 1/4 teaspoon Fine Sea Salt
  • 1/2 teaspoon Cinnamon
  • 1/2 cup Coconut Oil (virgin, unrefined, melted and cooled)
  • 1/2 cup Maple Syrup
  • 1/2 teaspoon Vanilla Bean Paste or Vanilla Extract

Optional Add Ins

  • 1/2 cup Chocolate Chips (pre bake, see note)
  • a few handfuls Chopped Dried Fruit (such as Turkish apricot, sour cherries, cranberries, or raisins (post bake))

Instructions 

  • Preheat oven to 275°F (135°C). Line a sheet pan with parchment paper.
  • Mix oats, pecans, coconut, sunflower seeds, salt, cinnamon, and optional chocolate chips in a bowl.
  • Combine melted coconut oil, maple syrup, and vanilla. Pour over dry ingredients and mix thoroughly.
  • Press mixture evenly onto the prepared pan and bake for 1 hour at 275°F (135°C). Increase temperature to 300°F (148°C) and bake for 20-25 minutes, rotating halfway.
  • Cool completely in the pan. Toss in dried fruit if desired. Store in an airtight container for up to 3 weeks.

Notes

For extra clusters, do not stir during baking. Customize with your favorite dried fruits or chocolate chips.
