Ingredients

Protein

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 2 cups fresh baby spinach
  • 1 teaspoon dried Italian herbs
  • Red pepper flakes optional Red pepper flakes, optional
  • Fresh for garnish Fresh basil

Instructions 

  • Season chicken with salt and pepper. Cook in olive oil until golden, then set aside.
  • Sauté garlic in the same skillet for 1 minute. Add cream, broth, and Parmesan; simmer.
  • Stir in sun-dried tomatoes, Italian herbs, and spinach; cook until wilted.
  • Return chicken to skillet, spoon sauce over, and heat through. Garnish with basil.

Notes

Use fresh basil for the best flavor and adjust red pepper flakes to taste.
