A flavorful and healthy baked tilapia dish featuring cherry tomatoes, olives, and fresh herbs, perfect for a quick Mediterranean-inspired meal.

Ingredients

Protein

  • 4 fillets tilapia fillets

Vegetables & Fruits

  • 2 cups cherry tomatoes (halved)
  • 1 cup Kalamata olives (pitted and sliced)

Aromatics & Oils

  • 3 cloves garlic (minced)
  • 1 lemon lemon (juiced)
  • 2 tablespoons olive oil

Seasonings

  • to taste Salt and pepper Salt and pepper

Garnish

  • for garnishing Fresh basil or parsley (chopped)

Instructions 

  • Preheat oven to 400°F (200°C). Lightly grease a baking dish and place tilapia fillets inside.
  • Mix cherry tomatoes, olives, garlic, lemon juice, olive oil, salt, and pepper. Toss to coat.
  • Pour the mixture over the tilapia fillets evenly.
  • Bake for 20-25 minutes until fish flakes easily.
  • Garnish with chopped basil or parsley and serve immediately.

Notes

For extra flavor, add a squeeze of fresh lemon before serving.
