A quick and flavorful stir fry combining ground beef with fresh Mediterranean vegetables for a healthy and satisfying meal.

Ingredients

Meat

  • 1 lb ground beef

Vegetables

  • 1 medium zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 small red onion, chopped
  • 1/2 cup green or kalamata olives

Aromatics

  • 2 cloves garlic, minced
  • 2 tablespoons olive oil

Spices

  • 1 teaspoon paprika
  • 1/2 teaspoon ground cumin
  • to taste Salt and pepper

Garnish

  • optional Fresh parsley (for garnish)

Instructions 

  • Heat olive oil in a large skillet over medium heat.
  • Add chopped red onion and cook until translucent, about 3-4 minutes. Stir in garlic and cook for 1 minute.
  • Add ground beef, season with paprika, cumin, salt, and pepper. Cook until browned.
  • Add zucchini and cherry tomatoes. Cook for 5-7 minutes until tender. Stir in olives and cook for 2 more minutes. Garnish with parsley if desired and serve hot.

Notes

Feel free to add a squeeze of lemon or a sprinkle of feta for extra flavor.
