1mediumzucchini, sliced
1cupcherry tomatoes, halved
1smallred onion, chopped
1/2cupgreen or kalamata olives

Instructions
Heat olive oil in a large skillet over medium heat.
Add chopped red onion and cook until translucent, about 3-4 minutes. Stir in garlic and cook for 1 minute.
Add ground beef, season with paprika, cumin, salt, and pepper. Cook until browned.
Add zucchini and cherry tomatoes. Cook for 5-7 minutes until tender. Stir in olives and cook for 2 more minutes. Garnish with parsley if desired and serve hot.
