Instructions
Preheat oven to 400°F (200°C). Combine tomatoes, olives, peppers, shallot, garlic, sun-dried tomatoes, olive oil, oregano, salt, and pepper in a baking dish.
Bake for 30 minutes until tomatoes soften. Burst any unsplit tomatoes.
Mix cumin, paprika, salt, and pepper; season tilapia fillets with this mixture.
Place seasoned fillets on top of the tomato mixture and bake for 10 minutes until fish flakes easily.
Garnish with parsley and serve immediately over cooked rice.
Notes
Use fresh parsley for best flavor. Store leftovers in an airtight container for up to 3 days.
