3cupsbaby tomatoes(half sliced in half)
1/2cupKalamata olives(chopped)
1/2cupgreen bell pepper(chopped)
1smallshallot(diced)
4clovesgarlic(minced)
1/4cupsun-dried tomatoes
2tablespoonsolive oil
1tablespoonoregano
1teaspoonsalt
1/2teaspoonblack pepper
1teaspooncumin
1teaspoonpaprika
4filletstilapia

Instructions
Preheat oven to 400°F (200°C). Combine tomatoes, olives, bell pepper, shallot, garlic, sun-dried tomatoes, olive oil, oregano, salt, and pepper in a baking dish.
Bake for 30 minutes until tomatoes soften. Burst any unsplit tomatoes.
Mix cumin, paprika, salt, and pepper; season tilapia fillets with this mixture.
Place seasoned fillets on top of the tomato mixture and bake for 10 more minutes until fish flakes easily.
Garnish with parsley and serve over cooked rice.
