Ingredients

Vegetables and Aromatics

  • 3 cups baby tomatoes (half sliced in half)
  • 1/2 cup Kalamata olives (chopped)
  • 1/2 cup green bell pepper (chopped)
  • 1 small shallot (diced)
  • 4 cloves garlic (minced)
  • 1/4 cup sun-dried tomatoes
  • 2 tablespoons olive oil
  • 1 tablespoon oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 4 fillets tilapia

Garnish and Serving

  • to taste Fresh parsley (for garnish)
  • for serving Cooked rice

Instructions 

  • Preheat oven to 400°F (200°C). Combine tomatoes, olives, bell pepper, shallot, garlic, sun-dried tomatoes, olive oil, oregano, salt, and pepper in a baking dish.
  • Bake for 30 minutes until tomatoes soften. Burst any unsplit tomatoes.
  • Mix cumin, paprika, salt, and pepper; season tilapia fillets with this mixture.
  • Place seasoned fillets on top of the tomato mixture and bake for 10 more minutes until fish flakes easily.
  • Garnish with parsley and serve over cooked rice.

Notes

Use fresh parsley for best flavor and store leftovers in an airtight container for up to 3 days.
