A flavorful and healthy Mediterranean-inspired turkey salad perfect for sandwiches or served on a bed of lettuce.

Ingredients

Protein

  • 2 cups turkey (shredded or chopped) (or chicken, tuna, or salmon)
  • 1/4 cup red onion (chopped)
  • 2 stalks celery (chopped)
  • 1/4 cup Roasted Red Pepper (chopped)
  • 1/4 cup Greek Kalamata Olives (sliced)
  • 1/4 cup Spanish Queen Olives (sliced)
  • 1/4 cup Mild Pepper Rings (chopped) (for spice, optional)
  • 1 tablespoon mayonnaise
  • 1 teaspoon minced garlic
  • 1 tablespoon fresh lemon juice
  • 1/8 teaspoon kosher salt and/or pepper (adjust to taste)

Instructions 

  • Shred or chop the turkey and set aside.
  • Chop all veggies and olives, then combine in a bowl.
  • Mix mayonnaise, lemon juice, garlic, salt, and pepper in a small bowl.
  • Fold the mayonnaise mixture into the chopped veggies and turkey.
  • Chill for at least 4 hours before serving.
  • Serve on lettuce, bread, or wraps as desired.

Notes

For extra flavor, let the salad sit overnight to meld the flavors.
