A flavorful and healthy Mediterranean-inspired turkey salad perfect for sandwiches or served on a bed of lettuce.
Ingredients

turkey (shredded or chopped)

red onion (chopped)

Roasted Red Pepper (chopped)

Greek Kalamata Olives (sliced)

Spanish Queen Olives (sliced)

Mild Pepper Rings (chopped)

(adjust to taste)
Instructions
Shred or chop the turkey and set aside.
Chop all veggies and olives, then combine in a bowl.
Mix mayonnaise, lemon juice, garlic, salt, and pepper in a small bowl.
Fold the mayonnaise mixture into the chopped veggies and turkey.
Chill for at least 4 hours before serving.
Serve on lettuce, bread, or wraps as desired.
Notes
For extra flavor, let the salad sit overnight to meld the flavors.
