Instructions
Preheat oven to 350°F (175°C).
Brown ground beef in a skillet until a deep crust forms, then stir in taco seasoning and cooked rice with half the salsa.
Stuff the mixture into bell pepper halves, top with remaining salsa and half the cheese.
Bake covered for 45 minutes, then uncover, add remaining cheese, and bake 5 more minutes to melt.
Notes
For extra flavor, add chopped cilantro or a squeeze of lime before serving.
