Instructions
Preheat oven to 375°F (190°C). Grease a 9x13 inch dish.
Mix melted butter, cream cheese, sour cream, milk, garlic, onion, salt, and pepper until smooth.
Add sliced potatoes and toss to coat. Stir in 1.5 cups of cheddar cheese.
Pour into dish, cover with foil, and bake 45 minutes. Remove foil, sprinkle remaining cheese, and bake 15-20 minutes until bubbly and golden.
Let stand 5-10 minutes, garnish with chives, then serve.
Notes
For extra flavor, add a pinch of paprika or cayenne pepper.
