Delight in these classic mini eclairs filled with vanilla pudding and topped with rich chocolate.

Dough
1/2cupbutter
1cupwater
1/8tspsalt
1cupflour
4mediumeggs
Filling
1small boxinstant vanilla pudding
1cupevaporated milk
1/4cupmilk
Chocolate topping
1/2cupmilk chocolate chips
1/2cupsemi sweet chocolate chips
1Tbspbutter
2Tbspmilk
Instructions
Bring butter, water, and salt to a boil. Stir in flour and cook until smooth. Cool for 5 minutes.
Beat in eggs one at a time. Pipe onto a parchment-lined sheet and bake at 425°F for 15 minutes, then reduce to 375°F and bake 10-15 minutes until golden.
Whisk pudding mix with evaporated milk and additional milk until smooth. Fill cooled eclairs with pudding using a pastry bag.
Melt chocolate chips, butter, and milk until smooth. Dip tops of eclairs into chocolate and shake off excess.
Notes
Ensure the pastry is completely cooled before filling to prevent melting.
