Delight in these classic mini eclairs filled with vanilla pudding and topped with rich chocolate.

Ingredients

Dough

  • 1/2 cup butter
  • 1 cup water
  • 1/8 tsp salt
  • 1 cup flour
  • 4 medium eggs

Filling

  • 1 small box instant vanilla pudding
  • 1 cup evaporated milk
  • 1/4 cup milk

Chocolate topping

  • 1/2 cup milk chocolate chips
  • 1/2 cup semi sweet chocolate chips
  • 1 Tbsp butter
  • 2 Tbsp milk

Instructions 

  • Bring butter, water, and salt to a boil. Stir in flour and cook until smooth. Cool for 5 minutes.
  • Beat in eggs one at a time. Pipe onto a parchment-lined sheet and bake at 425°F for 15 minutes, then reduce to 375°F and bake 10-15 minutes until golden.
  • Whisk pudding mix with evaporated milk and additional milk until smooth. Fill cooled eclairs with pudding using a pastry bag.
  • Melt chocolate chips, butter, and milk until smooth. Dip tops of eclairs into chocolate and shake off excess.

Notes

Ensure the pastry is completely cooled before filling to prevent melting.
