These adorable mini veggie pizza bites are perfect for a quick snack or party appetizer, packed with colorful vegetables and melty cheese on a crispy crust.

Ingredients

Dough

  • 1 can Refrigerated Pizza Dough (13.8 oz, choose classic or thin crust)
  • 0.5 cup Pizza Sauce (store-bought or homemade)
  • 1.5 cups Shredded Mozzarella Cheese (low-moisture, part-skim)
  • 0.25 cup Finely Diced Red Bell Pepper (adds sweetness and color)
  • 0.25 cup Finely Diced Green Bell Pepper (vegetal flavor and color)
  • 0.25 cup Finely Diced Red Onion (mild sharpness)
  • 0.25 cup Sliced Black Olives (salty, briny kick)
  • 0.25 cup Sliced Mushrooms (optional, earthy depth)
  • 1 tablespoon Olive Oil (for brushing dough)
  • 1 teaspoon Italian Seasoning (dried herbs blend)
  • to taste none Salt and Black Pepper (for seasoning)
  • optional none Grated Parmesan Cheese (for topping)
  • optional none Cornmeal (for dusting)

Instructions 

  • Preheat oven to 400°F (200°C), prepare baking sheet with parchment or lightly greased, dust with cornmeal if desired.
  • Unroll and optionally thin the pizza dough, then cut out circles with a 2.5-3 inch diameter cutter. Re-roll scraps if needed.
  • Transfer dough circles to the baking sheet, brush tops with olive oil, and add a small spoonful of sauce, then sprinkle with Italian seasoning, salt, and pepper.
  • Top each with shredded cheese and evenly distribute diced vegetables and optional Parmesan.
  • Bake for 10-15 minutes until golden and bubbly, then cool slightly before serving.

Notes

For best results, avoid overloading toppings to prevent sogginess.
