A rich and moist vanilla pound cake that's perfect for any occasion.

Ingredients

Dry ingredients

  • 225 g all-purpose flour
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt

Wet ingredients

  • 175 g softened butter
  • 150 g sugar
  • 150 ml milk
  • 2 large eggs eggs (lightly beaten)
  • 1.5 teaspoons vanilla extract

Instructions 

  • Preheat oven to 170°C (325°F). Grease and line a loaf tin.
  • Sift flour, baking powder, and salt. Cream butter and sugar until fluffy.
  • Add eggs gradually; if curdling, add a spoonful of flour.
  • Mix in half the milk and flour, then repeat with remaining milk and flour. Pour into tin.
  • Bake for 60-65 minutes until a skewer comes out clean. Cool before serving.

Notes

Ensure not to overmix the batter for a tender crumb.
