No Bake Chocolate Oatmeal Bars

Delicious and easy-to-make no-bake chocolate oatmeal bars perfect for a quick treat or snack.

Ingredients

Dough

  • 1 cup butter
  • 1 2 cup brown sugar (packed)
  • 1 teaspoon vanilla extract
  • 3 cups rolled oats
  • 1 cup semisweet or dark chocolate chips
  • 1 2 cup peanut butter

Instructions 

  • Line an 8-inch or 9-inch square baking dish with parchment paper, overhangs for easy removal.
  • Melt butter and brown sugar in a saucepan over medium heat until dissolved, then stir in vanilla and oats. Cook on low for 3-4 minutes.
  • Press half of the oat mixture into the prepared dish to form the crust. Melt peanut butter and chocolate chips together until smooth, then spread over the crust.
  • Top with remaining oat mixture, pressing gently, and drizzle with reserved chocolate mixture. Refrigerate for 2-3 hours before cutting into bars.

Notes

Ensure the sugar mixture boils long enough for the bars to set properly; too short may result in soft bars, too long can make them crumbly.
