Delicious and easy-to-make no-bake chocolate oatmeal bars perfect for a quick treat or snack.

1cupbutter
1 2cupbrown sugar (packed)
1teaspoonvanilla extract
3cupsrolled oats
1cupsemisweet or dark chocolate chips
1 2cuppeanut butter
Instructions
Line an 8-inch or 9-inch square baking dish with parchment paper, overhangs for easy removal.
Melt butter and brown sugar in a saucepan over medium heat until dissolved, then stir in vanilla and oats. Cook on low for 3-4 minutes.
Press half of the oat mixture into the prepared dish to form the crust. Melt peanut butter and chocolate chips together until smooth, then spread over the crust.
Top with remaining oat mixture, pressing gently, and drizzle with reserved chocolate mixture. Refrigerate for 2-3 hours before cutting into bars.
Notes
Ensure the sugar mixture boils long enough for the bars to set properly; too short may result in soft bars, too long can make them crumbly.
