Quick and easy banana pancakes made with just three ingredients, perfect for a healthy breakfast or snack.

Ingredients

  • 1 medium ripe banana ((½ cup mashed))
  • 1 large egg
  • ¼ cup all-purpose flour (or oat flour for gluten-free)
  • ¼ tsp cinnamon or vanilla extract (optional)
  • 2 tbsp chocolate chips or blueberries (optional)
  • 1 tbsp protein powder (for extra nutrition, optional)

Instructions 

  • Peel and mash the banana until smooth.
  • Add the egg and whisk until combined. Stir in flour and optional ingredients.
  • Heat a nonstick skillet over medium heat with a little butter or oil.
  • Pour batter in 2-3 tbsp portions; cook 2-3 mins until bubbles form, then flip and cook 1-2 mins more.
  • Serve warm with toppings of choice.

Notes

For fluffier pancakes, let the batter rest for a minute before cooking.
