Quick and easy banana pancakes made with just three ingredients, perfect for a healthy breakfast or snack.

Instructions
Peel and mash the banana until smooth.
Add the egg and whisk until combined. Stir in flour and optional ingredients.
Heat a nonstick skillet over medium heat with a little butter or oil.
Pour batter in 2-3 tbsp portions; cook 2-3 mins until bubbles form, then flip and cook 1-2 mins more.
Serve warm with toppings of choice.
Notes
For fluffier pancakes, let the batter rest for a minute before cooking.
