Delicious and healthy banana muffins made with gluten-free oat flour, perfect for a quick breakfast or snack.

Ingredients

Dry ingredients

  • 1 1/4 cup oat flour (certified Gluten Free, if needed)
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

Wet ingredients

  • 2/3 cup mashed bananas (about 1 large banana)
  • 1/4 cup avocado oil
  • 1 egg egg
  • 3 tbsp pure maple syrup
  • 1 tsp vanilla extract

Instructions 

  • Preheat oven to 375°F (190°C). Line a muffin tin for 6-8 muffins.
  • Mix dry ingredients in a large bowl.
  • Combine wet ingredients in a medium bowl.
  • Pour wet into dry and mix until just combined.
  • Fill muffin cups nearly full and bake for 18-22 minutes.
  • Cool for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Use ripe bananas for best flavor and sweetness.
