These soft, gluten-free dinner rolls are quick to make using oat flour and Greek yogurt, perfect for a wholesome meal.

Ingredients

wet ingredients

  • 2-1/4 cups plain Greek yogurt (554g)
  • 1 tablespoon apple cider vinegar
  • 2 tablespoons honey

dry ingredients

  • 1-2/3 cups oat flour (206g)
  • 1/2 cup gluten-free flour (95g)
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 egg white egg white

Instructions 

  • Preheat oven to 375°F (190°C) and prepare an 8x8" pan.
  • Mix wet ingredients until smooth, then add dry ingredients and combine until tacky.
  • Divide dough into 9 balls, place in pan, and shape into rolls.
  • Brush tops with egg white and sprinkle oats.
  • Bake for 25-28 minutes until golden and firm. Cool before serving.

Notes

Use fresh oats for best texture and flavor.
