A flavorful and easy one-pan dish featuring tender salmon in a creamy chipotle sauce, perfect for a quick weeknight dinner.
Ingredients

chopped sun-dried tomatoes
(plus 1 Tbsp oil from jar)

low-sodium vegetable or chicken broth

heavy cream

adobo sauce
(from chipotle peppers)

baby spinach
Instructions
Season salmon with salt and pepper.
Cook salmon in butter until golden, then set aside.
Sauté sun-dried tomatoes, oil, chipotle peppers, and onion; add garlic and cook until fragrant.
Pour in broth, then add cream and adobo sauce; simmer and add spinach until wilted. Return salmon to heat through.
Serve over rice or grains, spooning sauce over the top.
Notes
For extra flavor, top with fresh herbs or a squeeze of lime before serving.
