Ingredients

Protein

  • 1.5 lbs boneless, skinless chicken breasts (cut into 1-inch pieces)
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter
  • 6 cloves garlic, minced
  • 1.5 cups long-grain white rice, uncooked
  • 3 cups chicken broth
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried Italian seasoning
  • 0.5 cup heavy cream
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions 

  • Season chicken with salt, pepper, and Italian seasoning.
  • Cook chicken in olive oil until browned, then remove and set aside.
  • Melt butter, add garlic, and cook until fragrant. Add rice and toast lightly.
  • Pour in chicken broth, bring to a simmer, then return chicken, cover, and cook for 18-20 minutes.
  • Stir in heavy cream and Parmesan, let stand, then fluff rice and garnish with parsley.

Notes

Ensure the lid stays on during cooking to prevent steam escape and ensure rice cooks evenly.
