One Pan Turkey Burrito Rice

A flavorful and easy one-pan dish combining lean turkey, rice, and vibrant spices, perfect for a quick and satisfying meal.

Ingredients

Grains

  • 180 g long grain rice, uncooked

Meat

  • 455 g extra lean ground turkey

Vegetables

  • 1 unit onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 unit red pepper, finely chopped
  • 1 unit green pepper, finely chopped
  • 1 unit jalapeno, seeds removed and finely chopped

Canned Goods

  • 240 g black beans, drained
  • 180 g sweet corn, drained

Other

  • 2 tablespoons tomato paste
  • 480 ml chicken stock
  • 0.5 tablespoon brown sugar
  • 1 tablespoon cumin powder
  • 1 tablespoon paprika
  • 1 tablespoon oregano
  • 1.5 teaspoons ground coriander
  • 1.5 teaspoons onion powder
  • 1.5 teaspoons garlic powder
  • 0.5 teaspoon cayenne (or more for spiciness)
  • 1 cup black beans, canned, drained
  • 1 cup sweet corn, canned, drained
  • to taste salt and black pepper
  • 1 handful fresh coriander, chopped
  • 2 spring onions chopped

Instructions 

  • Spray a deep frying pan with olive oil spray and sauté onion, garlic, peppers, and jalapeño until softened.
  • Add ground turkey and cook until browned; stir in spices to coat.
  • Mix in rice, tomato paste, chicken stock, black beans, and corn; bring to a boil, then cover and simmer for 15 minutes.
  • Remove from heat, let rest for 10 minutes with lid on, then stir in chopped coriander and spring onions.
  • Serve as burrito bowls with your favorite toppings.

Notes

Adjust spice levels to taste and serve with fresh toppings.
