Instructions
Spray a deep frying pan with olive oil spray and sauté onion, garlic, peppers, and jalapeño until softened.
Add ground turkey and cook until browned; stir in spices to coat.
Mix in rice, tomato paste, chicken stock, black beans, and corn; bring to a boil, then cover and simmer for 15 minutes.
Remove from heat, let rest for 10 minutes with lid on, then stir in chopped coriander and spring onions.
Serve as burrito bowls with your favorite toppings.
