A delicious and easy one-pan dish combining roasted vegetables with savory turkey gravy, perfect for a comforting meal.
Ingredients
Vegetables

Brussels sprouts, halved

red onion, sliced

olive oil

turkey drippings

turkey or chicken stock

all-purpose flour

dried thyme

Salt and black pepper to taste

Instructions
Preheat oven to 400°F (200°C).
Toss vegetables with olive oil, salt, pepper, garlic, thyme, and paprika.
Arrange vegetables on a baking sheet and roast for 25–30 minutes.
Add turkey drippings or sliced turkey, roast for 5–8 minutes.
Make gravy by whisking flour and butter into drippings, then adding stock until thickened. Combine with vegetables and turkey, cook briefly.
Garnish with lemon zest and parsley before serving.
Notes
Use fresh herbs for best flavor and adjust seasoning as needed.
